How to make the most of apples

I have an apple picking date and I'm trying to decide what I'm going to make when I get them all home so I can be ready. So far I've settled on apple pie filling, apple butter, dehydrated apple chips, cider, apple sauce, and apple cider vinegar from the cores and scraps. Anything else I should consider?

When I make the cider I expect to have a good amount of leftover pulp that is too thick for sauce. Can I add water back to it to make apple sauce or should I use the pulp for something else like dehydrating it to a powder for baking?
